An Easy Recipe for Healthy Homemade Chicken Broth

With cold and flu season upon us, chicken stock is a must have, feel-good necessity in every kitchen.

Chicken soup is the ultimate food for healing the mind and body. Anyone who has suffered from a seasonal illness, or a break-up or even the death of a loved one can tell you there’s nothing more comforting when you feel under the weather than a steaming bowl of chicken soup. The heart and soul of every pot of this ultimate comfort food is the warm slurpable broth. Instead of reaching into the pantry for a condensed can of who knows what, here’s a quick and easy, not to mention economical, way to make your own chicken stock.

Simple Chicken Stock

You will need:

  • 2 chicken quarters
  • 1 onion, quartered
  • 1 stalk of celery, chopped
  • 4 cups water
  • Salt and pepper to taste

Instructions:

  1. Place the chicken quarters, onion, and celery in a stockpot or large kettle. Pour in the water, season with salt and pepper, and slowly bring to a boil.
  2. Turn the heat to low, cover and simmer for one hour.
  3. Place a colander over a large clean bowl. Carefully pour your chicken stock into the colander to strain. Remove and discard the skin and chicken bones. Reserve the chicken meat and vegetables for future recipes.
  4. Allow the stock to cool. Using a large spoon carefully skim the layer of fat from the surface. Your stock is now ready to use on its own or in your favorite recipe.

Makes 4 servings.

Hint: If you are not using your stock right away you can store it in and airtight container in the refrigerator for 3-4 days or in the freezer for up to 3 months. For individual servings freeze in ice-cube trays; just pop two cubes into a large mug, fill 3/4 full with water and microwave two minutes, and sip your way to a speedy pick-me-up when you’re feeling down.

For quick and simple meal idea add a half-pound of cooked cheese tortellini and a dash of basil. Serve up in large bowls with a side of fresh, crusty Italian bread. To make it even more substantial add a side salad or some fresh fruit and enjoy a healthy and delicious dinner.

Once you have your basic chicken stock down to a science, you will open up a world of limitless culinary possibilities. This stock is one of the most versatile kitchen staples. There are so many inexpensive, healthy meals to cook up for your family that start with this invaluable recipe and fresh natural ingredients, from good old-fashioned chicken noodle soup to chicken and biscuits and yummy potpies.
