And when they're falling off the bone, who can resist that tender, flavorful meat. This recipe slow cooks the meat in the oven before grilling, which maximizes both tenderness and flavor. Lay each slab of ribs on a large piece of plastic wrap. Rub the ribs with equal amounts of the seasonings. Then baste each with 2 tsp liquid smoke and wrap tightly. Marinate in refrigerator for 4 hours, or overnight. Bake at 325 degrees F for one hour and 45 minutes. Meanwhile, wrap baking potatoes individually in foil. Place on medium-high heat grill during last 45 minutes of baking process. Remove ribs from oven, and cut 1/3 off of each slab of ribs to reserve for Meal 2. Store in refrigerator. Cook remainder of ribs on the grill and baste with barbeque sauce as desired. Meal 2: Chipotle Pork Sandwiches with Pepper Jack Cheese and Mashed PotatoesIngredients
In a pan on stove combine the butter, water and 1 tablespoon of Chipotle seasoning over medium-low heat until melted. Add the pork. Cover and cook until warm, stirring occasionally, about 5 minutes. Meanwhile, toast rolls. Serve pork on rolls topped with cheese, onion, tomato and Chipotle Mayo, as desired. Mashed potatoes
