Grilled Flank Steak and Steak Fajitas

If one were to poll men here in the Midwest about their favorite food to fire on the grill, I believe the overriding answer would be Steak, Steak and more Steak. Somehow the heartiness of the cut and the gristle of the beef make grilling steak a totally manly experience. Make your manly-man happy this week with not just one, but two dinners centered around steak.

Flank steak is a great steak to make on the grill, as it's narrow cut allows for a short grilling time. Also, as flank steak is a little tougher than some other cuts, it can withstand an intense marinade.

Italian dressing has a zing to it that brings life to flank steak. It works great as the basis to a simple marinade that gives the steak a good gristle when grilled, and also transfers well to the flavor of fajitas.

Serve the steak with potatoes or pasta for Meal 1, and enjoy and entirely different meal of steak fajitas from your leftovers one other night this week.

Meal 1: Grilled Flank Steak Recipe

Ingredients

Mix together Italian dressing, vinegar and garlic. Place steak in a baking dish, or Ziploc bag, and season with salt and pepper. Cover steak with marinade and refrigerate for at least 4 hours. Bring steak to room temperature before grilling. Grill over medium-high heat for 4 minutes each side. Cut across the grain and serve in strips.

Meal 2: Steak Fajitas

Ingredients

In a medium sized pan on stove, warm olive oil, lime juice and cumin. Add onions and peppers, stirring frequently, and cook until glazed. Add steak and stir until warmed through. On tortillas, serve steak topped with lettuce, tomatoes and cheese, with sour cream as desired.
