How to Caramelize Nuts

Caramelized nuts are crisp and flavorful additions to many recipes. Toss them into salads, use them as dessert garnishes or present them as a holiday gift.

Caramelizing nuts may seem like an advanced cooking technique, something only gourmet food lovers would be willing to go the extra distance to do. The truth is that the process of making caramelized nuts is exceptionally easy using this simple recipe.

Caramelized Nuts

Ingredients:

  • 2 cups pecans or walnuts, whole or chopped
  • 1/3 cup mayonnaise
  • 1/3 cup brown sugar

Directions:

  1. Preheat oven to 350 degrees.
  2. In a medium-size bowl, combine the pecans or walnuts with the mayonnaise and brown sugar.
  3. Stir the combination well until the nuts are coated thoroughly.
  4. Spray a glass baking pan or pie plate with cooking spray to prevent sticking.
  5. Place the mixture in the glass baking pan or pie plate, and spread evenly.
  6. Bake for 10-15 minutes until golden brown and bubbly.
  7. Let the nuts cool slightly for a few minutes.
  8. Break the nuts apart that are stuck together.

Once nuts are cool they are available to be used immediately, or store them in a ziploc bag and refrigerate for future use. Nuts should stay good for up to two weeks.

Tips for Caramelizing Nuts

Many recipes call for caramelizing nuts by using a combination of corn syrup, butter, sugar or honey in a non-stick skillet on top of the stove. This recipe bakes them in the oven, which is a much easier way of achieving the caramelization process. The nuts will not taste like mayonnaise. The mayonnaise flavor is completely undetectable.

Caramelization occurs when sugar is heated to a temperature above 300 degrees. This process causes a browning effect. The most important tip for caramelizing nuts is to watch them carefully so they do not burn.

Another good tip is to choose pre-chopped nuts, instead of whole nuts, if a recipe calls for caramelized nuts that are chopped. It's easier to chop the nuts before caramelizing them, then it is after the caramelization process has occurred.

Uses for Caramelized Nuts

Some people enjoy caramelized nuts in pecan or walnut halves for snacking, while others may want them chopped to add into salads or for use as a dessert garnish. Many recipes call for caramelized nuts, so they are great to have on hand already made.

Add caramelized nuts to a salad of baby spinach and goat cheese, and toss with a balsamic vinaigrette for a simple and elegant accompaniment to main course meals. Caramelized nuts add lots of flavor and texture to salads.
